For the Love of Carbs

A ginormous helping of cheesy scalloped potatoes with green herbs sprinkled on top.

Carbs = Balance.

Carbs get a bad rap and we’re pissed about it. At Big Role, we love carbs. We could dive into a vat of au gratin potatoes and dry off with a French baguette slathered in olive oil and garlic. Olive oil is a healthier substitute for butter, by the way.

Potatoes are soothing to the tummy, a root vegetable, and can be used endless ways. Let’s just say it, potatoes are food for the soul.

There are the pasta people, who could live off pasta for the rest of their lives. They don’t have to have an ounce of Italian DNA. They just love pasta. Couscous, orzo, or wheat and egg pastas. In soups, spaghetti, layered with cheese, mixed veggies, spices. Fugget about it.

Then there are the rice folks. They love rice with every meal. Put stuff on top of it, put it in stuff, use it as a side, roll it with fish.

Bread? Don’t get me started thinking about how delicious that is with olive oil, toasted, then fresh garlic rubbed all over it. Delightful halitosis.

You need something solid, and they’re your friend, the carb. The solution is balance. Are you making green leafy veggies on the side? If you had spaghetti and garlic bread for lunch, make a protein packed salad for dinner, or something filled with produce. It could get outta hand if you do carbs for breakfast, lunch, and dinner every day, unless you want to upgrade your wardrobe – if you know what I mean.

We need carbs for energy. Potatoes have protein, iron, potassium, calcium, vitamin C and vitamin B6. Pasta has protein, iron, fiber, zinc, and potassium. Some pastas are fortified with B vitamins. And this is just your basic boxed pasta. Go with whole grain pasta and you’ll get more nutrition. White rice has protein and fiber. Brown rice has protein, magnesium, and phosphorus and some are fortified with other goodies. Pair these with some produce to balance it out and you’re having a banging meal that your body will love you for!

Many businesses know there are ADA laws and pretend like they don’t know there are ADA laws, and the cities and government allow them to get away with it.
